RICHMOND, Va. (WRIC) — It’s race weekend in Richmond, and with the races comes a lot of good eats at the raceway.
Meteorologist Matt DiNardo sat down with Chef Ellen Edenfield, the woman behind one of those creations that you may have chowed down on.
Edenfield says there’s chaos in every corner at Richmond Raceway, so they took that to the heart and put that right into their hot dog.
“So we have our bacon wrapped hot dog going into the bun,” Edenfield said. “Next, because you want to keep all your hot ingredients together — anything that’s warm in temperature — we’re going to go in with the chili.”
She then put their pepper jack cheese in because they want that to stick a little bit to the chili and melt in there.
“Then we’re going to go with our sriracha slaw,” she said. “It’s nice and cool from the cooler but it’s a little spicy from the sriracha.”
Next, Edenfield added sliced up jalapenos that have bread-and-butter brine on them.
“It still has heat to it but you can taste the sweet and taste the vinegar,” Edenfield said. “It’s not burning your mouth.”
“I can actually eat this without much of a problem, and I’m a little wimpy,” Matt said.
Edenfield says when all the ingredients are together, it’s like chaos because you don’t know which element of heat you might be getting at that bite.
“There is chaos in every bite,” Matt said. “But it’s so good!”
