8-year-old Richmond girl wins best Va. recipe, heads to White House for Kids’ State Dinner

RICHMOND, Va. (WRIC) — An 8-year-old from here in Richmond will dine at the White House with the First Lady!

Simone Spalding was the Virginia winner of the 2015 Healthy Lunchtime Challenge.

Kids from all over the country submitted recipes that promote healthy eating and Spalding’s “Rainbow Chili” was chosen as the best in the Commonwealth.

“I love to eat colorful, flavorful food! That’s why I created Rainbow Chili,” Simone is quoted as saying on LetsMove.gov. “It’s an easy way for kids to eat a whole lot of vegetables—one from almost every color of the rainbow.”

Today, she will join the 55 other winners for lunch, music and even a trip to the White House kitchen garden.
