4 to 6 servings


  • 3 cups beef or chicken stock or broth
  • 1¼ cups coarsely chopped or a julienne (very
    thin strips) of fresh or drained thawed frozen
    vegetables (a combination of any of the following: onions, green onions, carrots, green
    and sweet red and yellow peppers, mushrooms, celery, broccoli, spinach, turnips,
  • 1 tablespoon finely snipped fresh basil
    leaves (no stems)
  • 1 teaspoon lemon juice
  • 2 to 3 drops hot pepper sauce or to taste
  • Salt and freshly ground black pepper to taste
  • Sprigs of fresh basil for garnish
  • 4 to 6 lemon slices, seeds removed, and sprigs of fresh
    basil for garnish


In a medium heavy saucepan, combine all ingredients except
basil sprigs.  Bring mixture to a simmer
over moderate heat; continue to simmer about 10 to 15 minutes or until consommé
is heated through and flavors are blended.


To serve, ladle consommé into soup mugs and garnish each
with a lemon slice and a sprig of fresh basil, if desired.
