TURKEY SALAD WITH MIXED GREENS,
APPLES, PEARS, NUTS,

GORGONZOLA CHEESE, ETC!!!

Try this turkey salad recipe
with a different flavor twist to use-up your left-over turkey.

 

  • 6
    cups crisp mixed greens or 8 ounces fresh spinach or romaine
  • 3
    cups cubed or cut-up cooked turkey or chicken
  • 1
    to 2 firm ripe apple(s), core and seeds removed, thinly sliced, and immediately sprinkled with lemon juice to
    eliminate any discoloration
  • 1
    to 2 firm ripe pear(s) (Bartlett or Bosc,
    or Anjou
    variety), core and seeds removed, thinly sliced,  and immediately sprinkled with lemon juice to
    eliminate any discoloration
  • ¾
    cup cubed peeled fresh pineapple or drained canned
    pineapple-in-its-own-juice (small cubes)
  • ¾
    cup seedless green or red grapes, each cut in half if desired
  • ½
    cup thinly sliced green onions
  • ½
    cup bite-size pieces pitted dates
  • ½
    cup dried dark sweet cherries or sweetened dried cranberries
  • Gorgonzola
    Cheese Dressing
    or vinaigrette dressing of choice or extra virgin olive oil and balsamic
    or red wine vinegar as desired
  • Salt
    to taste (optional)
  • ½
    to 1 cup pecan or English walnut halves or coarsely chopped pecans or English
    walnuts or whole or halved cashew nuts
  • Crumbled Gorgonzola cheese as desired for garnish (optional)

 

Clean
mixed greens and thoroughly dry.   Or,
rinse spinach leaves or romaine thoroughly to remove any grit or sand; drain well,
dry with absorbent paper, and remove any core and discard large stems.  Tear remaining leaves into bite-size
pieces. 

 

In
a large serving bowl, combine all ingredients except nuts, dressing of choice,
salt, and Gorgonzola cheese. Cover and chill in the refrigerator until ready to
serve.  Just before serving, add
desired amount of dressing of choice or olive oil and vinegar, tossing salad
mixture lightly to mix.  May add salt to
taste, if desired. Garnish salad or individual servings of salad with nuts of
choice and crumbled Gorgonzola cheese, if desired.

 

Gorgonzola Cheese Dressing

about
2 ¾ cups

  • ½
    to 1 garlic clove, peeled and minced
  • ¾
    cup tomato-base chili sauce
  • ¾
    cup cider vinegar
  • ½
    cup salad oil (corn, canola, or safflower oil)
  • 3
    tablespoons sugar or the equivalent of 3 cups sugar in granulated sugar
    substitute
  • 1
    tablespoon Worcestershire sauce or to taste
  • 1/8
    teaspoon white pepper or to taste
  • Salt
    to taste
  • 2
    ounces Gorgonzola cheese, crumbled

Combine
all ingredients in a blender container; cover and blend at medium speed until
smooth.  Store dressing in a clean glass
jar or other container, tightly sealed, in the refrigerator until ready to use.
