Granola Breakfast or Snack Bars

GRANOLA BREAKFAST OR SNACK BARS
about 2 to 3 dozen squares or bars

 

  • 2/3 cup sifted flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • Pinch each of ground ginger and ground cloves (optional)
  • Pinch of salt
  • 2 tablespoons butter or margarine, at room temperature (see note)
  • 2 tablespoons shortening or cooking oil (corn, canola, or safflower oil)(see note)
  • 1/3 cup light brown sugar or the equivalent of 1/3 cup brown sugar in brown sugar substitute, firmly packed
  • 1 egg yolk or egg white, at room temperature (see note)
  • ½ teaspoon vanilla extract
  • 2 tablespoons milk or reduced-fat or skim milk
  • ¾ cup granola with honey and almonds
  • ½ cup dried tart or sweet dark (Bing) or light (Rainier) cherries or dried blueberries or sweetened dried cranberries, or a combination (see note)
  • ½ cup semi-sweet or milk chocolate morsels/pieces/chips or white chocolate morsels/pieces/chips, or reduced-fat chocolate pieces of choice, or carob chips (optional) (see note)
  • ¼ cup dark or golden seedless raisins, or a combination (see note)
  • ¼ cup chopped dates (see note)
  • ¼ cup chopped dried apricots or peaches or apples (see note)
  • ¼ cup chopped English walnuts or pecans or almonds (optional) (see note)

 

Sift together the first 5 to 7 ingredients; set aside.  In a medium bowl, cream butter and shortening thoroughly.  Add egg yolk or egg white and vanilla, beating well.  Alternately stir in flour mixture and milk, one half at a time, mixing well.  Stir in granola, dried fruits, chocolate pieces, and nuts.  Spread mixture into a greased 9 x 9 x 2-inch baking pan.  Bake in a preheated moderate oven (350 degrees F.) for 20 to 25 minutes or until cake tester inserted in the center of the pan comes out clean.  To serve, cut into squares or bars.  Store in an airtight container or freeze breakfast bars, tightly covered in heavy-duty aluminum foil, in the freezer for up to three months. 

Note: May increase butter to 3 tablespoons, if desired.  May omit butter/margarine or shortening, if desired; use ¼ cup Smucker's Shortening & Oil Baking Replacement. 

Note: May reduce sugar to 5 to 7 tablespoons, if desired.  May also use 6 tablespoons honey, if desired. 

Note: Egg white does not contain any fat or cholesterol. 

Note: May use any combination of dried fruits, nuts, and chocolate pieces to equal 2 cups total.
